Cooking Tips

1.  Rabbit meat is extremely lean.  Since it has very little fat, it will become quite dry if cooked quickly or at high temperature.  Slow cooking will bring out the flavor and texture of the meat.

2.  One of our favorite ways to cook a whole rabbit fryer is in the rotisserie oven at about 300 for an hour and a half.  Baste it several times as it cooks.  Any marinade can be used.  We've tried butter,  Italian dressing, Cajun seasoning, and several different creations based on combinations of the above.

3.  Another easy way to cook a fryer is to dip it in butter and Ritz (or any club cracker) bake it in the oven, at about 350 for an hour or so, cooking time will vary by the size of the rabbit, but when the meat is no longer pink near the bone, it's done.

4.  The good old crock pot.  A whole fryer cut up and placed in the crock pot with your favorite vegetables and seasonings will simmer all day and be a delightful stew come evening.
